Professional Sharpening Steel with a square section blade in high carbon chrome vanadium steel, hardened to 64° Rockwell C and hard chrome plated.
The square section enables more of the knife edge to stay in contact with the Steel.
Two surfaces feature our Fine Cut and two surfaces are Polished so that a knife can be both sharpened and honed with the same Steel.
This Steel is fitted with a sterilisable, non-absorbent polypropylene handle with a 1.5" square guard and stainless steel hanging ring.
